Healthier Apple Crumble

So I have almost done 4 months of my healthier eating regime now, and I am so happy to be able to report to you that I have lost 25.9kg in weight in that time (around 4 stone!). I think the secret of my success so far is to consider that everything is OK for you in moderation. If you fancy chocolate then have some, but have 1-2 squares of good quality dark chocolate rather than a whole family-sized bar of milk chocolate like i used to!

One of my biggest problems in this journey I am taking is ensuring I eat enough fibre! I love vegetables and I have been making myself some really interesting salads recently, but quite frankly I cannot stand eating any fruit! The problem I have is that I almost have a phobia of the texture of fruit!! The contrast in textures between the waxy skin of an apple and the juicy, crunchy flesh is pretty much my idea of food hell!! I like the taste of most fruits though, so the challenge for me is coming up with interesting recipes for me to consume the fruit I need to...

This is what brought me on to creating this recipe. I had an appithany last week which questioned whether I could make a relatively healthy dessert that can still taste great without all the calories you would expect to find in the recipe! I have attempted this in several ways in this recipe.

Firstly, when you usually make Apple Crumble, you would cook the apples in quite a lot of sugar, which would in turn add quite a few calories to the recipe. However, in my recipe, I have used a Silver Spoon Sugar Product called Baking Blend, which is 50% Sugar and 50% Sweetner, and gives you twice the sweetness of just sugar, meaning you can use 35g of Baking Blend to cook the apples in, rather than 70g of sugar that it would be advised to use. Also, because 35g of Baking Blend is only 50% sugar, you are only adding 17.5g of sugar rather than 70g - a 75% saving on calories!!

Secondly, my crumble topping contains some breadcrumbs, but it is bulked out with cornflakes, which reduces on calories, and also ground Almonds, which will provide both fibre and protein to the recipe, making it more nutritious and just as tasty! Just as importantly though, with busy lifestyles and less time to make the effort to prepare food at home these days, the recipe took me less than one hour from starting to peel the apples to having it in front of me ready to eat!!
