Mango Chilli Cashew Chicken Salad
So I am almost 3 months into my diet now, and I have lost over 3 stone now, which for me is fantastic but it is only the start, and I still have a lot of weight to lose! However, It can be extremely difficult to eat healthily whilst eating tastily too! I mean, quite a common question I consider is "How on Earth can I make Salads interesting?"

I know what you are thinking too - "He's Barmy!!". Part of that is true I suppose too, seeing as though I am a member of England Cricket's Barmy Army, and spending thousands of pounds to travel to Australia to see them lose 5-0 to the Aussies!
However, I considered that contemporary flavour combinations inspired by Asian cuisine might just ignite a boring old lettice leaf and transform my simple salad into something healthily tasteful! Mango and Chilli is a combination that seems to be a thriving food trend at the present time, with the flavours working well with both chicken and prawns.
By using simple store cupboard ingredients of sweet chilli sauce and mango chutney, you can really create a lovely marinade for the chicken, which will really enhance flavours of the whole salad. By adding cashew nuts too, you get a crunch in the salad too with a natural sweetness and an added protein boost too! Just chuck together any salad ingredients you have in your fridge, add the chicken and dress & garnish the salad to bring your salad to life...
I would advise using a sweet salad dressing for the salad though, as this will further enhance the flavours in the chicken, and will make your mouth water and leave you wanting more!
