Healthier Eating Apple Crumble

Ingredients (4-6 portions)

 

For Apple Base

4-6 Larger Sized Apples, peeled & chopped

2 tbsp. Warm Water

35g. Baking Blend (1:1 ratio sugar/sweetner)

50g Sultanas (Optional)

1/2 tsp. Cinnamon (Optional

 

For Crumble

80g Plain Flour

40g Butter

30 g Ground Almond

30g Cornflakes, broken down into small pieces

1/2 tsp. Cinnamon (Optional)

On a diet and sick of eating plain old boring fruit?? Try this simple recipe to get your fibre, as well as getting protein boosts too!

Method

 

  1. Preheat your oven at Gas Mark 4, or 180 Centigrade or 350 Fahrenheit. Place your prepared apples in a saucepan with the water and the Baking Blend Sugar/Sweetner on a medium to high heat. Freqently stir the apple until you have softened them and create a thick liquid with some softened pieces of apple left.

  2. Pour the mix into your oven proof dish (around 12" x 6" in size), and sprinkle your Sultanas and Cinnamon on top of the mix, should you choose to use them.

  3. Place your flour and butter into a mixing bowl, and using your fingertips only, rub the ingredients together for several minutes, until you have a pale golden crumb consistent in size. Add the Ground Almond and cornflakes, and mix together by swirling the bowl around with your hands until there is an even distribution between each component.

  4. Spread your Crumble mixture evenly over the top of the apples, and sprinkle the cinnamon over the top should you choose to. Place in the oven and cook for around 20-25 minutes, or until golden brown on top.

  5. Serve with a frozen fat free yoghurt or on its own for a tasty indulgence without all the guilt!
