Cashew Chicken Salad with Chilli and Mango

Enjoy this summer time salad now that the clocks have rolled forward! The Chicken and Cashew Nuts have been marinated in Chilli Sauce and Mango Chutney to infuse into something special!

Ingredients (To serve 1)

 

For the Cashew Chicken

 

1 Chicken Breast, cubed.

50g Cashew Nuts, roughly chopped.

3 tsp. Mango Chutney

1 tsp. Sweet Chilli Sauce

Cayenne Pepper, to taste.

Oil/Frylight, for cooking.

 

 

For the Salad

 

Choose your desired amount of any of the following...

- Lettuce/Rocket/Watercress or similar leaves.

- Tomatoes, cucumber, peppers.

- Spring Onion, Red or White Onion

- Carrot, celery

- Your Desired Salad Dressing (I highly recommend Burger Sauce as it works really well with the mango and chilli! Honey and Mustard also works very well!)

- Your chosen garnishes - eg. Cress, Black Pepper, Fresh Parsley, Crotons.

Method

 

  1. In a bowl, mix together the Mango Chutney, Sweet Chilli Sauce and your Desired amount of Cayenne Pepper (add more should you want it spicy!). Add your pre-chopped chicken breast into the bowl, stir, and leave to marinade whilst you prepare your salad. 

  2. Wash, chop, grate, slice or dice your chosen salad ingredients,  and place in a bowl ready to serve. 

  3. Heat some frylight/oil in a pan, and add your marinated chicken breast and your chopped cashew nuts. Cook on a medium heat for 7-10 minutes, stirring regularly to ensure even cooking. Check a piece of the chicken should you be unsure about whather it is cooked inside. Drain any excess liquid and serve on top of the salad.

  4. Finish off the salad by dressing and garnishing with your chosen ingredients. 

  5. Tuck in and enjoy!
