Stuffed Marrow with Pearl Barley

I always remember staying at my Gran's house when I was younger, and regularly she would serve Marrow in cheese sauce with her roast dinners. However, on it's own, Marrow can be a bit plain and let's face it, do many people go round in life saying "I love eating Marrow regularly!"? Chances are that many of you that read this will rarely eat it, if at all!

I can appreciate that making Stuffed Marrow is a bit of an old fashioned type recipe, but I would like to share this recipe with you all because the contrasts of flavours and textures in this recipe worked extremely well. As well as using pancetta, garlic, mushroom and onion, I used Pearl Barley as a nutritious ingredient that would help to stuff the Marrow as well as provide great flavour. The sweetness from the roasted/baked marrow, mixed with the savoury flavours listed is one of the things that makes flavours in this recipe taste so good!

Pearl barley is a fantastic source of fibre, as well as containing high levels of a variety of vitamins and minerals that will help to lower your chlorestorol levels and reduce the risk of a wide array of illnesses and diseases. Incorporating Pearl Barley into your diet can only be a good thing for your health!
