Stuffed Marrow with Pearl Barley

Try this fantastically tasty recipe with a nutritional edge! Great for getting your 5 a day, and high in vitamins and minerals too!

Ingredients

 

100g Pearl Barley.

1 medium Marrow.

1 clove Garlic, Minced.

1/2 onion, diced.

100g Pancetta.

50g Mushroom, chopped.

1 tsp. Dried Chives.

1 tsp. Dried Parseley.

Black Pepper, to taste

Method

 

  1. Pre-heat your oven on 200oC/400oF/Gas Mark 6. Place your Pearl Barley in a pan with hot water. Bring to the boil, and leave to simmer on a medium heat for around 10 minutes.

  2. In the meantime, Cut the ends off of the marrow, and slice it in half. Spoon out all of the seeds in the centre of the marrow.

  3. Place the garlic, onions, pancetta and mushrooms into a separate pan, and fry the ingredients off until cooked. When the pearl barley is cooked, add this to the rest of the ingredients, and stir in the dried chives and parseley.

  4. Spoon the pearl barley mix into the marrow, packing it in tightly as you do so. Press down with your fingers for best results. Place your now stuffed marrow on a baking tray, and leave to bake in the oven for 30-40 minutes, or until the marrow starts to brown around the outside.

  5. Slice your stuffed marrow as required, being careful as you serve to ensure the filling stays inside.
