The "Love Food, Hate Waste" Casserole
Do you ever find that you waste too much food? That half an onion, few mushrooms or your leftover Sunday lunch meat? If the answer is yes, then this is the perfect recipe for you!
According to the "Love Food, Hate Waste" campaign, a household containing a family with children will waste around £60 a month on buying food that they eventually throw away because they havent eaten it in time! The worst thing about this is, that you probably dont realise how much you are wasting...
Imagine it this way. Instead of seeing that half an onion, few mushrooms or leftover meat being thrown away, look at it as money. You are throwing away money that could have been spent on something nice - a designer shirt, new shoes or even a nice meal out at a top restaurant! That £60 could feed 4 people easy at a good quality restaurant!!
For this recipe, actually just raid your vegetable drawers in your fridge on a Monday, and use up that half an onion, few mushrooms, and any other vegetables you have started using. Chop that leftover meat up into small pieces along with the vegetables, and just chuck it all into a pan!
My recipe here was a Beef & Vegetable Casserole. I added garlic, wholegrain mustard, stock and tomato puree to the pan with the beef and vegetables, and thickened with cornflour (although gravy granules will work equally as well!) to make a hearty, winter warming casserole that all the family will enjoy!
It will not only taste nice, but it will taste even better as you will also be thinking about the pennies you will be saving!!
