The "Love Food, Hate Waste" Casserole
No need to follow this recipe to the letter - it is just a guide. Add whatever you have left in your fridge to make great food whilst saving the pennies!

Ingredients
2 cloves Garlic, crushed
1/2 Onion, diced
1/2 Sweet Onion, diced
1/2 carrot, diced
1 stick celery, diced
1 Leek, chopped
Leftover Roasted Beef
2 tsp. Wholegrain Mustard
2 tbsp. Tomato Puree
1/2 Green pepper, chopped.
4-5 Mushrooms, chopped
1 Litre, Vegetable stock
5-6 tsp. Gravy Granules
Black Pepper, to taste
Garnish
Horseradish Sauce
Black Pepper
Method

Prepare your meat and vegetables as required. Add the Garlic, onion, celery, carrot, sweet onion and leek to the large pan, alongside the leftover beef. Add the wholegrain mustard and tomato puree, and stir in. Leave to fry for 2-3 minutes.

Add the green pepper and mushrooms, and leave for a further 2 minutes.

Pour the stock into the pan, so it covers all the ingredients. Place the lid on the pan, and bring to the boil. Leave to simmer on a medium heat for 25 Minutes.

Thicken the stock with the gravy granules, and season with the black pepper.

Serve in a bowl, with mash potatoes should you wish. You can garnish it with extra black pepper, and horseradish sauce should you wish! Enjoy!
