Healthy Eating Chicken Tortilla Bake
So it's January, the time of year where everyone has just over-indulged at christmas and you decide that you want to try and be healthier. Don't worry though - there are many of us that have decided the same, me included!!
Healthy eating can be boring though can't it? You can eat salad after salad, fruit a plenty and drink plenty of water, but it just is not the same as indulging in that greasy takeaway, family-sized chocolate bar or that pint of beer that you crave so much!
Well never fear! Here is the first of a string of healthy eating recipes that I have designed to help you eat something different to the usual healthy food. I estimate this dish to be under 450 calories per portion, and is very filling - I can vouch for that after last night! The variety of textures and colours in this dish means that there is a different bite in every mouthful, and is very tasty too!
Take your chicken and roast it with the vegetables, make the sweet and peppery tomato based sauce whilst you are waiting, pour over the top and sprinkle crushed tortilla chips over the top and bake for a bit longer, and you will have a very tasty, low calorie and low fat option for your dinner in around an hour from start to finish!
