Healthy Eating Chicken Tortilla Bake
Ingredients (serves 4-6, serve 1 chicken thigh per person!)
Sauce
1 clove of Garlic, minced
½ Red Onion, peeled and chopped
½ White Onion, peeled and chopped
1 Carrot, peeled and chopped thinly
1 chicken stock cube
1 vegetable stock cube
1tbsp. Tomato Puree
1 400g can of Chopped Tomatoes
1 tsp. Dried Basil
1 Handful Chopped Rocket
2-3 Drops of Lemon Juice
100ml water
Rest of Dish
4-6 chicken thighs.
½ Red Onion, Peeled and Chopped
½ White Onion, Peeled and chopped
½ Courgette, Sliced.
½ Red Pepper, Sliced
½ Green Pepper, sliced
100g Mushrooms, sliced
Pepper, to taste
FryLight/Olive Oil
400g Can, Cannellini Beans
50g Tortilla Chips, crushed




Method

Preheat your oven to 200OC/400OF/Gas Mark 6. Prepare your vegetables as necessary.

Start preparing your dish by making the sauce. Add the Minced Garlic, onions and carrot into a pan and spray with FryLight, or drizzle with Olive Oil should you not have any FryLight. Cook on a medium heat, and as the vegetables start to soften, crumble your stock cubes into the vegetables and stir it in.

Add your tomato puree and chopped tomatoes to the pan, and bring to the boil, stirring all the time. Once bubbling, add the basil, chopped rocket and lemon juice to taste. Add the water and leave to simmer for 15-20 minutes, or until the carrot in the sauce is “al-dente”.

Whilst the sauce is simmering away, Place your remaining Vegetables in a large ceramic casserole dish. Place in the oven to roast for 5 minutes. Wash the Chicken Thighs, and place on top of the vegetables and roast for a further 25 minutes.

Place the drained can of beans on top of the chicken and vegetables, and pour the sauce over the top of this. Sprinkle the tortilla chips on top and place back in the oven for another 20 minutes, or until steaming hot all the way through!

Once cooked, take out of the oven and leave to stand for 5 minutes. Enjoy with a selection of vegetables, or own its own should you prefer!
