Snowman Cupcakes!

IT’S SNOWING!!!! Ok, it’s not setting on the ground, not here anyway – it’s too warm for that (Yea, I didn’t think so either!). However, the snow reminded me of a cute little snowman cupcake I made in the past. This is a chocolate cupcake with chocolate frosting, with a dusting of icing sugar on top with a large marshmallow snowman face poking out of the top! I even called him “Frosty” because of the chocolate frosting on top!
Children and grown-ups will love these! They are fun to make, look fantastic and are so easy to customise to how you like them! You could add a variety of flavours to make them different, add orange, mint or chocolate chips for example. My specific flavour of choice would be black forest flavour, but this may not be quite as suitable for the children!
I find the key to making the most amazing, moist, luscious cupcakes is the recipe being used in the cakes. No matter how much you are making, the weights of the sugar, butter, eggs and flour/cocoa powder must be exactly the same. I would advise before you start weighing out 4 cracked eggs, and then weigh out exactly the same amount of sugar, butter and flour. If like in the recipe, you use cocoa powder, and then substitute around 20% of the flour for cocoa powder (200g = 160g flour + 40g cocoa powder).
And most importantly, remember what my gran used to say about baking cakes – If the mixture isn’t good enough to lick out the bowl afterwards, then the cupcakes probably aren’t worth having! Have fun and indulge, but only if you do not find yourself pregnant – it does have raw egg in!
