Soft Boiled Scotchies!
So my first food blog shall be on a British Classic - The runny yolk Scotch Egg! Ingredients are simple and anyone can make them! All you need is some free range eggs, some of the finest sausagemeat money can buy and ideally, some herby bread! This is one of my favourite snacks and is great to make whether you are hosting a party or just fancy a luxurious snack! The best bit too is that you get stuck in with your hands, so is an ideal recipe to make with the children too!
The key to the recipe is to ensure the eggs stay in tact when you peel the shells off the eggs. After boiling your eggs for 2-3 minutes, softly press the shell against your preparation surface and gently peel from the small cracks carefully using your fingers.
From this point on, the eggs will be fragile so you must take care as you mould the sausage meat around the egg. This is best done by making a "bowl shape" out of some sausage meat, then adding more once the egg is placed in the "bowl". Coat the meat with raw egg and roll in your breadcrumbs, and cook by deep-frying on a medium heat.
The result will be a crispy crust, contrasted with the soft, chewy nature of the sausage meat and the runny, gooey egg yolk oozing out of the centre, which just melts in your mouth! I would highly recommend serving with tomato ketchup, just to add the sweet flavour that compliments the Soft Boiled Scotchies perfectly in my humble opinion!
