Quorn & Vegetable Moussaka
I made this healthier alternative to the standard moussaka to fill me up with protein and fibre. It was very nice I must say, but you can replace Quorn with lamb mince and the Reduced fat dip with a white sauce should you prefer!
Ingredients – Serves 2
Base
1 Clove Garlic, minced
1 onion (red or white), diced
1 stick celery, diced
1 Carrot, peeled and diced
50g Green Pepper, diced
50g Red Pepper, diced
50g Mushroom, sliced
100g Quorn Mince
1x400g Can Chopped Tomatoes
400ml Vegetable Stock
1tbsp Tomato Puree
1 tsp Cinnamon
1tsp Oregano
1tsp Mint
5g Rocket
2-3 drops Lemon Juice
Salt/Pepper to taste
Rest of Dish
1 Aubergine, Sliced around 1.5cm thick
5-6 tbsp Reduced Fat Sour Cream Dip
25g Strong Flavoured Cheese (eg. Parmesan), grated
Parsley, Chives, Black Pepper – To garnish before cooking




Method

Preheat your oven to 200oC/400OF/Gas Mark 4.

Place your onion, garlic, celery and carrot in a large pan, and brown for 3-4 minutes on a medium heat. Add your peppers and mushrooms and leave for a further 2-3 minutes.

Add Quorn Mince to the pan, and add your chopped tomatoes, stock and tomato puree to the mix. Bring pan to the boil. Once boiling, reduce the heat and add your rocket, mint, cinnamon, oregano, lemon juice, and salt and pepper to your taste. Leave to simmer for 10-15 minutes on a low heat.

In the meantime, using a griddle pan, place your aubergine slices in the pan and brown off on both sides ready for constructing the moussaka.

Once the mix has simmered for the allotted time, start to construct your moussaka. You will need room for 5 equally tall layers in your dish. Place the appropriate amount of mix at the bottom of the dish, then griddled aubergine, mix, aubergine. With the final layer, spoon the dip onto the top of the aubergine, and spread evenly upon the top. Place your grated cheese on top of that, and sprinkle with dried parsley, chives and black pepper to garnish. Bake in the oven for 20-25 minutes, or until golden brown on top!

Serve and Enjoy! You can serve with a dressed salad should you wish, or just enjoy by itself!
